It’s nice to have potatoes. It’s nice to have garlic. It’s best to have garlic and potatoes. This is a super easy recipe and makes a great side dish. This recipe is for a single serving so can easily be multiplied to suit any serving.
5/6 Small variety potatoes such as new or charlotte variety
1 clove of garlic crushed
1 tbsp olive oil
Salt and pepper
a few sprigs of fresh herbs I prefer rosemary or thyme
Wash the potatoes clean and bring a pan of water to the boil. Par boil the potatoes in the boiling water for approximately 10 minutes until tender. Mix the oil and garlic together.
Space the potatoes on a baking sheet evenly. Using a fork or the back of a spoon crush the potatoes until they are flattened but still hold their shape.
Drizzle the potatoes with the garlic oil and season with salt and pepper. Place a few pieces of herb on each potato.
Bake in the oven at 220°C for 20 minutes until they are crispy and golden brown. To be extra indulgent you could grate some vegan cheese onto the potatoes when they go in the oven.
