Six years ago when Izzie and I first started dating she made this for me for breakfast and it is one of the first “vegan dishes” I remember eating.
As a new vegan (I was a meat eater at the time) this simple dish seemed so different and even exciting. Tofu was an exotic ingredient that I didn’t really know what to do with.
I know there’s a lot of tofu scramble recipes out there but for the above reasons it’s something I really want to include in my blog.
1 block firm tofu
1/2tsp ground turmeric
1/2tsp black salt
A few grinds of black pepper
1/2tsp onion powder
1/4tsp garlic powder
1tbsp non dairy milk
1tbsp non dairy butter
1tbsp olive oil
1 spring onion (scallion) chopped
Drain the tofu and press out as much moisture as you can or press for about half an hour in a tofu press.
Place the tofu in a bowl and roughly break it up into chunks. Add all the spices and mix well. Finally add the milk and stir again.
In a frying pan warm up the olive oil and throw in the spring onion. Gently fry for about 30 seconds and then add the tofu. Fry gently stirring occasionally until warmed through and some pieces of tofu go golden brown. Finally stir in the butter ensuring it’s melted through.
Serve immediately! I recommend trying it on toast.
